Hi Friends...
Just popping in quick to do a quick recipe share. I got this recipe from Jessie over at www.vanderbiltwife.com. My family loved it..super easy and very yummy!!
Slow Cooker Pork Tenderloin in Garlic, Herb, and Red Wine Sauce
3 T dried minced onion
1 1/2 tsp. dried parsley
1 tsp. garlic salt
1 tsp. turmeric
1/2 tsp. celery seed
1/2 tsp. sugar
1 c. water
1 c. red wine
3 T soy sauce
3-4 large cloves garlic, peeled and cracked
2 lb. pork tenderloin, trimmed of silvery fat
black pepper
In slow cooker, mix all ingredients except pork and pepper. Place pork in slow cooker and flip to coat well with liquid and spices. Sprinkle pork with black pepper.
Cook on low 3-4 hours or until pork is cooked to 145F. To serve, slice tenderloin and serve with jus from the slow cooker.
[The first six ingredients are just a homemade dry onion soup mix. If you are in a hurry or don't stock many spices, you can substitute one package of soup mix.]
I cooked an almost 5lb tenderloin as we were feeding others and needed Bill's lunch..had plenty. Cooked most of the day on low..super tender!!

Menu planning....
Hi Friends!
Hope you all have had a good week. Ours has been fabulous!! Other than the fact,I seem to have gotten strep throat..but thanks to a big ole shot..I am on the mend.
Celebrated our fabulous MLK wrestling team this week..such a wonderful group of boys that are truly a team in every sense of the word,supporting eachother with their words and actions.Can learn a lot about friendship from them. From Freshman to Seniors to the Parents..we all enjoy it so much. Going to be sad when the season is over : )
A few of my favorite boys....
Thinking of linking up to Menu Plan Monday as a way to keep myself on track with menu planning..but for now am just going to write it down here.
Monday...Spaghetti and meatballs with homemade sauce. Made a bit pot of sauce today to freeze.
Tuesday..Garlic Red wine pork tenderloin,twice baked potatoes,and green beans.
Wednesday..Cowboy Food..great skillet dish with ground beef,spanich rice,beans and cheese.
Thursday..Chicken tortilla soup,homemade salsa and chips,flan for dessert.
Friday...Not sure as Lindsay is finally celebrating her birthday with friends..so her choice.
Looking forward to this week..Love getting things marked off the "list"

Been Awhile...
Hi Friends,
Can not believe it was May when I last posted. Time flies and things change for certain....spent some time today looking back at previous posts. It was good to read my "Ben" story again as I have been thinking about him. Praying he is doing well. Cried a bit when I read my post about Logan as he is almost 15 now..and it is unbelievable that Lindsay turned 11 this weekend. They are growing into fabulous young people and we are so proud...
Other than my kids growing up..the video that Logan made a year ago probably hit me the hardest. What a special time in our lives that was..but how it has changed. Truthfully..the majority of the families represented are no longer in our lives or if they are it is not anywhere near what it was then. It has gone from sharing meals and holidays together to simply passing pleasantries,if we happen to see them. Not sure what happened nor have any idea how to fix it...but truly think it is too far gone. That being said..We are moving on. Will always be thankful that we had those friendships at a time when we needed them but need to let it go.
Now on to more pleasant things...Starting this week,I am going to make some changes to my blog and begin sharing recipes,goings on, and linking to other blogs. I love the blogging community and am looking forward to becoming more active in it.
Apologize for the heavy post but needed to write it out to let it go. Much lighter posts coming soon : )

The Power of Friendship
Hi Friends...
Just wanted to share a video that Logan made with some pictures from an April visit from some special friends. He never ceases to amaze me in his insight and thoughtfulness. In my 40 years, I have had friends come and go but I can say without a doubt that there is something special about the families represented in this video and that is that God has brought us all together for a purpose and I am so very excited to see where He takes us.

Goodness..It has been a bit since I blogged,I have a number of things I want to blog about, but need to get the pictures off my camera : )
Two weeks from this past Saturday,I am doing the Country Music Half Marathon again,I did it for the first time last year. I can honestly say the feeling of accomplishment as I crossed the finish line was like nothing that I have ever felt. I was pretty proud of myself. I also did the Women's Half Marathon in Sept. of last year. Since that time,exercise and I have broken up a bit and I am not in the shape I was last year at this time. However,I will do the marathon and will finish..I am nervous but determined to do it. Tonight while walk/running, I began to feel that it feels good to do this feeling and began to set some new goals for myself. I am going to train as much as I possibly can in these last two weeks,and begin eating better and taking care of myself again. I am going to let go of the the fact that I am disappointed in myself for slowing my journey down.. Look ahead at where I am going and not behind..hard for me to do but am going to do it.What's worse is I know I have disappointed others in my setback, but am going to show them, I have the courage to continue. I put the Eleanor Roosevelt quote at the beginning of this post but really wanted to find one I had seen about quitting and having the courage to start again..can not find it.. I am digging to find the courage and determination to do this.
Another big goal that I have set as of today is to run next year's half...sounds HUGE to me but what an accomplishment it will be. And the biggest exercise wise is...by at least the age of 45 (will be 42 in Sept.) I am going to do the WHOLE 26.2 marathon. There I said it....and I will do it !
This week,I am also reevaluating some personal/home happenings. but those are for another post.

A New Favorite
Hello Friends..
We have been in a dinner rut around here lately, and when I found this website,
I just knew I had to try it.

You must check her out right now !
Her new cookbook called Southern Plate is wonderful and so are all the recipes
that I have tried form her book and her website. We tried the Cheesy Chicken and Rice tonight...and it was a bit hit ! She is so sweet and funny,
I know for certain we would be friends !
You must get this cookbook,I promise you will love it..and it makes a fabulous gift too !
